Our new summer menu has arrived – and it's full of fresh ideas and seasonal flavour.
Led by our talented chefs, the HF Holidays food and beverage teams have been busy crafting a range of exciting new dishes inspired by the best of British produce and the regions our guests love to explore. The Summer menu starts w/c 16 June 2025 and ends 30 September 2025. The new menu launches across our country houses – and we asked HF Holidays Development Chef, Simon Douglas, what guests can look forward to.
What inspired this year’s summer menu?
“We started with the ingredients. Summer gives us ripe tomatoes, courgettes, garden herbs, soft fruits – colourful, fresh produce that naturally lends itself to Mediterranean and coastal flavours. The goal was to create dishes that capture the relaxed, sociable feel of dining on a summer evening.”
What’s in season now?
“From heritage tomatoes and sweet peppers to raspberries and peaches, the summer larder is bursting with flavour. Many ingredients come straight from our own kitchen gardens, and all fresh fruit and vegetables are sourced within a 40-mile radius of each house, ensuring peak freshness and quality.”
New and improved for summer
“Guests following a vegan, vegetarian, gluten-free, or flexible diet will notice even more choice this year. Inspired by feedback from members and guests, our chefs have created dishes that can be easily adapted without compromising flavour or character, offering flexibility and flair in equal measure.”

Starters
Heritage Tomato Bruschetta
“There’s nothing quite like the taste of summer—fresh, colourful, and bursting with sun-ripened flavour. If one dish captures the season’s essence, it’s heritage tomato bruschetta. Simple and elegant, this Italian-inspired starter lets high-quality ingredients shine: sweet tomatoes, fragrant basil, and crusty bread brought together in one perfect bite.”

Flaked Smoked Mackerel with Poached Rhubarb Salad
“This beautifully balanced salad pairs rich, smoky mackerel with the tart brightness of poached rhubarb. The contrast is both refreshing and indulgent, creating a dish that’s light yet deeply satisfying—ideal for a sunny lunch or a lighter supper.”

Main Courses
Traditional Sunday Roast Beef
“Few dishes define British cooking like the Sunday roast. Ours is a classic: tender roast beef served with golden roasties, a towering Yorkshire pudding, and creamy cauliflower cheese. It’s a warm, familiar hug in every bite.”
Tuna Steak with Charred Sweetcorn Salad
“When the grill is fired up and the sun’s shining, it’s time for bold, fresh flavours. A seared tuna steak paired with smoky charred sweetcorn delivers crisp textures and clean, summery sophistication. Light yet packed with character.”

Dessert
Strawberry Pavlova
“Is there anything more summery than strawberries and cream? This dessert brings them together on a base of crisp meringue, finished with lashings of whipped cream and a cascade of juicy strawberries. Light, airy, and beautifully indulgent – it’s the taste of summer on a plate.”

Regional dishes to look out for
We’re proud to celebrate the local flavours of the regions where our houses are based. Here are just a few highlights from our summer kitchen:
Monk Coniston, Southern Lake District
Cumbrian Tattie Pot – Head Chef Peter brings a touch of magic to traditional Cumbrian dishes. This slow-cooked stew of lamb or mutton with root veg, black pudding, and stock, is topped with sliced potatoes baked until golden. Hearty, rustic, and full of flavour.
Nether Grange, Northumberland
Smoked Haddock Pan Haggerty – A regional classic reinvented. This comforting dish layers thinly sliced potatoes, onions, and Northumbrian smoked haddock, baked until crisp and golden. Head Chef Steve’s version is rustic yet refined, capturing the spirit of the North East.
Abingworth House, South Downs
Sussex Ginger Cake with Poached Rhubarb – Head Chef Mo transforms this traditional treat with bold flavour and beautiful balance. Rich with dark treacle, golden syrup, and ground ginger, the cake’s warmth is perfectly offset by tangy rhubarb.
Larpool Hall, Whitby
Whitby Fish & Chips – Crafted with love and expertise by Head Chef, Simon, this is an elevated version of an absolute classic. Light, crispy, and full of seaside flavour, this plate showcases locally sourced fish and a touch of Yorkshire charm. It’s a guest favourite for good reason.
From coast to countryside, this summer’s menu is full of character, flavour, and the joy of seasonal cooking. Whether you’re fuelling up after a long walk or unwinding over dinner with new friends, every dish has been created with care, creativity, and a sense of place.
On Mondays and Fridays, our Chef’s Special Menu showcases the creative flair of our chefs, featuring dishes inspired by the local flavours of the regions our country houses are based.
Please note that at our houses in Cornwall, the Scottish Highlands, and on the Isle of Wight, the Chef’s Special menu is served on Tuesdays and Saturdays. The sample menu shown is for illustrative purposes only, as daily menu options vary by house and depend on your arrival day.
