What’s new in the kitchens at our HF Country Houses this summer?

Summer has arrived at our HF Country Houses, and with it comes a menu designed for long, sunny days and relaxed evenings around the table. 

This season, expect lighter, brighter dishes that make the most of fresh summer produce, alongside much-loved favourites with a few creative twists. From vibrant ingredients to simple, satisfying flavours, every plate is inspired by the best of summer. 

We’re celebrating the season with classics such as prawn cocktail, smoked salmon, and beautifully braised beef, as well as colourful salads including burrata, heritage tomato, and Caesar salad. And for those with a sweet tooth, there’s plenty to look forward to too, from pavlova and cheesecake, to refreshing ice creams. 

Also, you can continue to enjoy our 'A taste of…' menus, served on arrival days and inspired by the food heritage of each region. These special menus shine a spotlight on local flavours, traditional dishes, and regional produce, giving every stay its own distinctive dining experience. Thoughtfully created by our Development Chefs, they’re designed to bring the stories and tastes of each house destination to life, sparking conversation around the dinner table.

Caramelised Pear & Roasted Walnut Salad, Holnicote House Summer Menu 

With Wookey Hole cheddar, baby gem, and ranch dressing, this salad combines regional artisan cheese with sweet pears and crunchy walnuts  

Pressed Chicken & Ham Terrine, Monk Coniston Summer Menu 

Served with pickles and Cumberland sauce, this classic terrine paired with Cumberland sauce is a regional favourite dating back centuries

Yorkshire produces exceptional cheeses celebrated for their artisanal quality. Enjoy a Yorkshire Blue cheese plate served with celery and apple salad, chutney, and biscuits. 

Steamed Bara Brith-Inspired Sponge Pudding, Nythfa House Summer Menu 

Served with warm crème anglaise, this is a sweet homage to Bara Brith, Wales’ famous tea loaf, transformed into a comforting pudding
