At HF Holidays, dining is about more than just great food, it’s about connection. After a day of exploring the countryside, or honing a special interest indoors, nothing compares to gathering around the table to share stories with fellow members and guests over a hearty meal.
That’s why we’re excited to reveal our new Winter 2025 Evening Menu, running from 6 October 2025 to February 2026 across all our UK country houses. Our chefs have created a menu of seasonal dishes designed to warm and welcome you each day.
Seasonal flavours, hearty favourites
This year’s winter menu celebrates the best of the season: squashes, brassicas, and root vegetables take centre stage. Look out for comforting dishes like Butternut Squash, White Bean, and Red Onion Tagine, Parsnip and White Bean Soup with crispy croutons, and Maple Roasted Beetroot Salad.

Guest favourites also return, including Apple Tatin, Cod Goujons with citrus salad, and the ultimate winter warmer - Braised Blade of Beef with buttery mash. And of course, some traditions never fade: a Traditional Prawn Cocktail, a hearty Sunday Roast, and Apple Crumble with custard remain firm staples.
Chef’s Specials inspired by local flavours
Our Chef’s Special Menus, served on Mondays and Fridays at most of our houses (Tuesdays and Saturdays in Cornwall, Scottish Highlands, and Isle of Wight), showcase the creative flair of our Head Chefs, featuring dishes inspired by local flavours or the regions in which our country houses are based.
Here’s a taste of what’s to come:
At Alltshellach in the Scottish Highlands, try Chicken Balmoral - chicken filled with a peppery haggis blend, wrapped in bacon, and served with a whisky cream sauce and neeps & tatties.
At Nether Grange in Northumberland, Head Chef Steve has reimagined the Singing Hinny – a Northumbrian favourite with a savoury twist. Traditionally a sweet griddle scone, Steve’s version swaps dried fruit for aged cheddar, with a hot cheese and chive sauce. Cooked on a hot griddle until golden and crisp, they still ’sing’ as the butter melts!
At Holnicote House in Exmoor, enjoy apple & cinnamon cake made with local apples, warm spice, and served with custard.
